Acre Baja Restaurant and Cocktail Bar
Acre (pronounced Ah-cray) Baja is a 25 acre piece of land with a modern, edgy, world class restaurant and cocktail bar located on a working farm just past Puerto Los Cabos nestled between Flora Farm and Los Tamarindos. This unique property is home to palm forests, mango and citrus groves, agave fields and underground springs. Twelve tree-houses will be added to the palm forest shortly and the full 25 acres will be developed with a hotel and swimming pool in the near future. The Acre Baja team offers you an educational experience bringing the principles of good farming directly to the table and hopefully evoking a consciousness about the effect of everyday food choices.
Executive chefs Kevin Luxande and Oscar Torres have worked in top restaurants in New York, Europe and most recently Los Angeles. They arrived at the Los Cabos airport hand carrying their stand mixer along with two suitcases full of elements needed to prepare and impress the Baja Acre team and owners, Stuart McPherson and Cameron Watt, with a 7 course meal. Their dream was to be involved with a sustainable working farm where they could undertake preparation of food that uses all the components and wastes nothing. Kevin and Oscar did impress the owners and team and are working hard to excite all of the people who make the trip to eat their beautifully executed dishes.
Danielle Tatarin (Dani) from Vancouver’s Keefer Bar is the general manager and cocktail program designer. She has been travelling throughout Mexico for two years sourcing small batch spirits and working with the Acre’s farm to create bitters and tinctures from fruit, herbs and flowers for her delicious and surely healthier (you could even say holistic) cocktails. As part of her commitment to the success of the project, she has been living on the property in her vintage silver stream trailer – now that’s an awesome woman!
As a writer, I am fortunate to travel through kitchens, exploring the lives of the owners, chefs and their staff to understand their passion for the culinary arts. So why should I be so fascinated by the lives of cooks? Maybe because they are our last genuine artisans. They take raw materials and mold them directly for us. The Acre Baja team are true artisans diligently working to create an unforgettable experience. When you walk through the sensual palm forest entrance to the restaurant, there is a sense that you are in for a very special evening. I encourage you to make the trek.
